Chin Seng Cooked Food at Tekka Market & Food Centre is a noodle stall that specializes in wanton and dumplings. You can have them deep fried or boiled, with or without noodle, dry or in soup. However, I am there for something else - the chicken chop noodle ($4/$4.50).

No one was in the stall when I arrived but I soon realized the stall owner is chatting with a customer at the table in front. After placing my order with her, she returned to the stall and put the chicken in the deep fryer.

The frying took some time and she explained that she will prepare the noodle only after the chicken is done or else, it will be all dried up.

What she said makes sense to me and I am impressed by her thoughtfulness.

My order came with chicken chop on a mound of mee kia (thin noodle) with some chye sim and a bowl of soup. I helped myself to some of the pickled green chili.

I had high expectations for the tossing sauce which looked potent.

However, I am a little disappointed that the chicken chop turned out to be chicken strips instead.

Giving everything on the plate a good toss, the thick and luscious sauce clung on the noodle beautifully. The savoriness of the sauce and the heat from the sambal (I had asked for more sambal) is superb. The white vinegar from the pickled chili whets my appetite even more.

As the chicken was fried upon order, it is hot and crispy on the outside while the inside tender and juicy.

It tasted really good. I bet the marinade is more than just the usual soy sauce, salt or oyster sauce.

Here comes the contradictory part. Despite the stall owner's effort to cook the noodle after the chicken, the noodle somehow turn out to be on the soggier side.

This plate of chicken chop noodle would be quite promising if not for the texture of the noodle. From the taste of the fried chicken to the tossing sauce, everything is outstanding by my standard.

If only the noodle is springier with a crunchy bite, this could easily be my favorite.
