While checking out Kampung Admiralty Food Centre, I chanced upon this Thai food stall called Siamkia Thai Cuisine.
What I like about them is their economical pricing. Their tom yum goong - the priciest item on their menu - is selling for only $6.
However, I decided to have their minced pork omelette (kai jeow moo sab) with rice instead, which happens to be their cheapest dish at only $2.80.
There is nothing more simple and comforting than having an omelette with rice. And not just any omelette mind you, but a Thai one.

Compared to a Western omelette, a typical Thai omelette is crispy around the edges yet fluffy at the centre. That is because while the former is pan fried in a little oil or butter, the latter is deep fried in a lot more oil resulting in a darker shade of brown.
Other than that, the seasoning used played a part too; due to my Asian roots, I find fish sauce much more tastier and flavorful than just plain salt and pepper.
The pork omelette from Siamkia is of a decent size. Hidden from view underneath it is a portion of white rice, slices of cucumber and lettuce. The color is such a beautiful shade of brown, it totally whets my appetite! Paired with the vinegar chili, every mouthful is appetizing.
I wished they can be more generous with the minced pork though and maybe add some basil leaves for added fragrance. Also, the centre of the egg is too thin. Perhaps, the oil was not deep enough therefore the egg could not fluff up to its fullest extent?
Although the stall does not have an extensive menu, they do offer a few dishes that is representative of Thai cuisine such as basil leaves minced pork with rice ($5.20), phad thai ($4.80) and pineapple fried rice ($4.80) among others.
