Noo Cheng Big Prawn Noodle is arguably one of the more popular Chinese stalls at Adam Road Food Centre. This is evident by the long queue in front of the stall everyday.

When I was there at around 11am on a weekday, the stall had already run out of the big prawns for their signature big prawn noodle ($8/$10/$12/$16). Left with the 'normal' prawns, I decided to go for the pork ribs prawn noodle ($5) but they got my order wrong and gave me pork ribs noodle ($5) instead.

The ribs are fine. It is just that I am there specifically to try the prawns hence I am a little disappointed.

I am excited to see kang kong (water convolvulus) and crispy pork lard in my bowl of yellow noodles. Prawn noodles in the past used kang kong but nowadays, a lot of stalls replaced it with bean sprouts. I still wish there is crunchy bean sprouts to balance the texture of the noodle which is slightly overdone.

It is not necessary to toss the noodles as it has already been done for you. I find the sauce rather oily but still delicious nonetheless.

I cannot remember how many there were but I think there are five spare ribs in the bowl of soup. The ribs were fork tender but rather fatty though.

The broth is light without a heavy umami taste. It is not bland per se but just sufficiently flavored. For me, I find it refreshing compared to the ones from my hood which are too heavy-handed with the rock sugar.

I assumed the prawns are blanched in the broth only upon order so the more bowls they sell, the tastier the broth will get. If you prefer a tastier broth, come later however, if you prefer a lighter taste, come earlier.

In my opinion, the number of ribs justify the $5 price but I feel it could do with a bit more noodles as the portion given is not very filling.
